barbeque, this is a stir fried dish made by cooking meats and vegetables on a large,
round, solid iron
griddle. Typically, diners fill up a bowl with various ingredients (e.g. meats, vegetables, sauces) from a
buffet, then hand it over to the
griddle operator who cooks the food in one section of the hot
griddle. Multiple diner's foods can be cooked at the same time due to the large size of the
griddle.
